My name is Pro and I am a Technique Consultant for development o f Japanese restaurant and also an executive chef in this area. I am in France at moment helping people with their business plans and implementing systems for their restaurants. One of my works here in France is the new Japanese restaurant sushi in Toulouse. It is up and running for about 6months now and it’s a marvellous business. Investors are happy and employees also.

1- Executive sushi chef (head chef) --- 3000€ + % of the company (partnership minimum of 10%) + benefits. The person on this position is in charge of planning, training and implementation of the system (usually this person commence the company).

2- Sashimi chef (sous chef) --- 2700€ + bonus and any *benefits that the company offers. This position is in charge of the supervision of the trainees and assistance to the head chef.

3- Sashimi chef Trainee --- 2500€ + benefits
4- Sushi chef (chef de partie) --- 2300€ + benefits
5- Sushi chef trainee --- 2100€ + benefits
6- Maki chef (chef de partie) ---1900€ + benefits
7- Maki chef trainee --- 1700€ + benefits
8- Preparation chef (commis) --- 1500€ + benefits
9- Preparation chef trainee (commis) --- 1300€ + benefits
10- Kitchen assistant --- 1100€ + benefits


*Benefits --- Extra hours paid, transport, 5 weeks holidays, 2 days off or 1.5 days off +1/2 paid or returned as spare time, food, etc... According to the French Convention collective nationale des hôtels, cafés restaurants*.
